For those of you who attended the 3rd annual Janati Wellness Day, you know that it wasn’t only the amazing guest presenters that stole the show, but the food as well. Jo-Anne Hopkins of Live Love Laugh Do Yoga made an array of tasty treats for all of those in attendance to enjoy, and, was kind enough to share her recipe with all of you.
These no-cook Super Seed Macaroons we are hit!
5 tbsp cocoa powder
1 cup cane sugar or sucanat
1/2 cup maple syrup
1/2 cup rice milk
1/2 cup coconut oil
In a medium sauce pot, bring all of the above to a boil (whisk until combined), then allow to simmer – reduce temp to slow bubble whisking occasionally. Simmer for approximately 7 minutes, then remove from heat.
In the pot, add:
1 tsp vanilla extract
1 cup grain flakes (oat, spelt, quinoa)
handful of chia seeds and pumpkin seeds
1/2 cup shredded coconut
1/2 cup crushed coconut (dried) – or more shredded
1/4 cocao nibs
Combine and then form into balls.
Refrigerate
