Recipe courtesy of our dear friends at the Shanti Retreat on Wolfe Island.

Ingredients:
– 1 cup raw cacao
– 1/2 cup unsweetened coconut
– 20 pitted dates, soaked
– 1/3 cup water
– 1/3 cup coconut oil
– 1/4 cup nuts, chopped
– 1 tsp vanilla
– 1 tsp cinnamon
– 1/4 tsp sea salt
For rolling truffles:
– shredded coconut, hemp hearts, or chai seeds
For topping truffles:
– almonds, goji berries
Instructions: *makes about 15 truffles
Soak dates in warm water for 10 minutes.
In a food processor, mix coconut with oil.
Add dates along with 1/3 cup of soaking water.
Add cacao, nuts, vanilla, cinnamon, salt, and more water if necessary.
Remove from food processor and roll into balls.
Roll truffles in coconut, hemp hearts, or chia seeds. Top with almond or goji berry.
Place in fridge to set for 30 minutes before serving.
